Taco Spaghetti

This Taco Spaghetti is a really easy recipe to whip together on a busy weeknight.   It’s a mix of 2 of our favorite foods, pasta and tacos.  The sauce is creamy, has a kick to it, and tastes even better the next day.  My husband loves taking it to work for his lunch.

You cook the  spaghetti according to package directions, so I start that first.  While I’m waiting for my water to come to a boil, I brown 1 pound of hamburger, until no longer pink.  Drain.  Put back in pot.

Add 1oz. of taco seasoning (1 packet) and 3/4 cup of water to beef and cook for a few minutes on med-high.  Turn down to med.  Add the Rotel and cream of chicken soup.  Stir.

Add the cubed Velveeta to the beef mixture, and cook until melted, stirring occasionally.   Turn down to low or warm.

Drain your pasta and combine with the sauce.  Serve and enjoy.

You can also place in a casserole dish, top with shredded cheese and bake at 350℉ for 30 minutes.

Another variation could be to substitute shredded cooked chicken for the beef.

  • 1 pound spaghetti
  • 1 pound ground beef or turkey
  • 3/4 Cup water
  • 1 oz (1 packet) taco seasoning.  I make my own, recipe is below.
  • 1 can Rotel tomatoes with green chilies. Choose the degree of heat, we use Medium
  • 1 10.5 oz can cream of chicken soup
  • 8 oz Velveeta, cubed


  1. Make pasta according to package.  In the meantime, brown your beef, drain and return to pot.  Add the water and taco seasoning.  Cook on med-high for a few minutes, then reduce to med.
  2. Add the Rotel and soup to beef, stir.  Add the cubed cheese, cook until melted, stirring occasionally.  Reduce to low.
  3. Drain the pasta, then combine with the beef mixture.  Serve.

Taco Seasoning

1/2 teaspoon Garlic Powder

1/2 teaspoon Onion Powder

1/2 teaspoon Oregano, dried

2 teaspoons Black Pepper

2 Tablespoons Chili Powder

1 teaspoon Paprika

2 teaspoons salt (optional)

3 teaspoons Ground Cumin

Combine ingredients and store in airtight jar or container.  2 Tablespoons equals 1 packet.

      If you love tacos, you will LOVE this. I double it because my boys and husband will eat 3 plates of it. I save some pasta water to add, in case it dries out, but usually it goes to quick for that. Enjoy
